Peanut Butter Cup Cupcakes


I was having a major sweet tooth last night.  They kind that wouldn’t go away until I ate something sweet.  I remember seeing something with peanut butter and whipped cream on Pinterest a while back, so I searched for it.  And low and behold, found a delicious recipe.

The receipt said it yielded 12 “cupcakes” but every review I read said they made 6 “cupcakes”.  So that’s what I did.  Next time, I’m going to make 12…they are a bit too big right now.

Here are your ingredients:

  • 1 tub of cool whip free (softened – not melted)
  • 3 tablespoons of peanut butter
  • ½ teaspoon unsweetened cocoa powder (the recipe called for sugar free chocolate syrup but I didn't have any)


Mix together in a large bowl.  Put cupcake cups in the cupcake pan, and spoon into your cups.  Freeze for at least 2 hours.  Enjoy!

I can think of a million different ways to make this – with fruit, cookies (if you don’t care about points/calories), nuts, flavored whipped cream, jam instead of PB, the list goes on.

6 cupcakes – 3 weight watchers points each
